A few years ago, we made a pledge to come up with as many ideas we could that were supportive of PURE’s commitment to leaving Zero Waste. We used pulp from our juices to make pasta, muffins, face masks, house cleaners and polishes, crackers, dog treats and more. What we didn’t expect is loving the process of using the PURE Juicer so much that we’d continue to come up with more recipes because we love them (as much as Mother Earth does).

It has been my dream to utlize leftover juice pulp to make homemade breads. In this blog, we show you a few options that we hope will inspire your baking.

Tips for Making Homemade Bread with a Juicer

Make Applesauce for Vegan Bread in Your Juicer

Why buy applesauce when you can make it in your PURE? Don’t buy it. Don’t cook it. Simply grind up some apples  and add the applesauce to your recipe.

If you want to add a little lemon on the mash, you can and it will keep it from turning brown.

Use Ground Carrots or Carrot Pulp to make Moist, Declious Sweet Bread

We use ground carrots when we make carrot cake. The recipe below uses the pulp, which thickens the batter and provides a nice texture to the bread.

If your batter ever gets too dry, add a little of the juice back or add some water.

Grind Spices for Bread in Your PURE Juicer

We cannot stress how much better fresh spices are than ones you purchase in a jar. When you do this, be sure to use a tall glass to cover the feed chute completely and fill and cover the feed chute before you turn the PURE on.

Dehydrate pulp and be creative. We have been dehydrating our juice pulp and including them as a topping (or using them for tea). These last a long time and offer color, flavor, and a personal flair.

Vegan Bread Recipes

Vegan Carrot-Apple Sweet Bread

Dry Ingredients

  • 2 cups self-rising flour
  • ¾ cup sugar
  • 1 cinnamon stick (ground)
  • 1 green cardamom pod (ground)

Wet Ingredients

  • 2 cups applesauce (about 2 granny smith apples)
  • ½ cup flax oil
  • 3 tbsp flax meal
  • 7½ tbsp water
  • 1 tsp vanilla extract
  • 1 sheet of carrot pulp (about 4 carrots)

Topping Spices

(see notes on grinding spices below)

  • 1 cinnamon stick
  • 2 green cardamom pods
  • ¼ tsp cloves
  • ¼ tsp ginger
  • ¼ tsp turmeric
  • 1 tsp sugar (coconut sugar works great too)

We used pulp powder from orange, clove, ginger, turmeric mixed with sugar to top this bread but you can use ground spices too.

Preparation

  1. Preheat the oven to 350 degrees.
  2. Butter a baking dish. Several small ramekins, one loaf pan, or 8×8 pan all work great.
  3. Mix all the dry ingredients together in a large bowl.
  4. Combine all the wet ingredients together in a small bowl and mix into the dry ingredients.
  5. Pour into prepared buttered baking dish
  6. Mix all the ground topping spices together with sugar. Sprinkle on the top before baking.
  7. Bake for 60-70 minutes at 350 degrees until top is golden.
  8. Let completely cool, slice, and enjoy with carrot juice!

Notes for Using the PURE Juicer

Grinding spices: Use a #2 grid. Put the cinnamon and cardamom pod into the feed chute, cover, turn on and grind. The spices will come out quite fast. If you have a tall jar that covers the bottom of the chute, it will help with ground spices flying everywhere.

Making applesauce: Use a #4 grid. Put apple slices into the feed chute, cover, turn on and press all apples through the chute. Clean the grid plate and feed chute to make sure to get all the applesauce.

Making carrot pulp: Use a #10 grid. Push carrots through the feed chute. Wrap the mash in a cloth and press. One cloth will work for four carrots. Save the pulp to use for the wet ingredients, and the juice to enjoy with your finished recipe.

 

Vegan Layered Olive Oil Biscuits Recipe

Ingredients

  • 6 tbsp of plant-based milk (oat, cashew, or almond are great options)
  • 7 tbsp olive oil
  • 1 cup self-rising flour
  • 3 tbsp fresh parmesan
  • ½ cup fresh basil
  • 2 cups fresh spinach
  • 1/2 medium beet, pulp

Preparation

  1. Preheat the oven to 400 degrees.
  2. Combine the milk and 5 tbsp of oil in a small bowl.
  3. Mix flour and parmesan in a large bowl.
  4. Mix the oil mixture into the flour and cheese until a wet but firm dough forms.
  5. The spinach/basil mash and beet pulp will be used as the filling in the biscuits. Save some beet pulp to sprinkle on top before baking.
  6. Dust your countertop lightly with flour and knead the dough until smooth.
  7. Roll the dough to ¼ inch thick. Using a round cookie cutter, cut biscuits. If you don’t have a cutter, roll dough into a tube and slice discs creating ¼ inch biscuits.
  8. Put one biscuit on a parchment lined baking sheet, spread a layer of spinach/basil mash and beet pulp, and top with a second biscuit.
  9. Brush the top with saved olive oil and sprinkle with beet pulp.
  10. Bake at 400 degrees for 15 minutes or until they are just firm and the tops are golden brown.

Notes for Using the PURE Juicer

Making spinach-basil mix: Use a #4 grid. Fill the feed chute with greens, cover, turn on and press. Continue until all the greens are done. Clean out the grid plate and feed chute to get all the spinach-basil mash.

Making beet pulp: Use a #10 grid. Push beets through the feed chute. Prepare mash to be pressed: 1 cloth for ½ beet is plenty, a press bag works great too. Press prepared pulp.  Save the pulp for this recipe and the juice to enjoy while savoring your Olive Oil Biscuits.

Health Benefits

apples: nutrient dense and high in soluble fiber, apples are an excellent source of vitamin C and antioxidants like vitamin E and polyphenols, which are linked to lower risk of heart disease and Type 2 diabetes.

basil: the many health benefits of fresh basil, such as reduced inflammation and improved mental health along with the prevention of heart disease, cancer, and oxidative stress, come from the many antioxidants it contains. 

beets: beets are nutrient-rich, containing a little bit of every vitamin and mineral your body requires, such as folate and manganese. They also lower blood pressure, reduce inflammation, and improve digestive health.

cardamom: cardamom may help lower blood pressure and help with digestive issues, thanks to its antioxidant and diuretic properties. It is also rich in compounds that fight inflammation, which helps protect the body from certain chronic diseases.

carrots: carrots boost immunity, keep blood sugar levels under control, and keep the digestion system in check. They also keep your eyes healthy— a unique property that not many other ingredients have. 

cinnamon: anti-viral, anti-bacterial and anti-fungal, cinnamon may support both gut health and heart health. Studies show it could also be beneficial to the aging brain, particularly in the case of inhibiting the kinds of proteins that cause Alzheimer’s. 

cloves: the flower buds of the evergreen clove tree, cloves are a sweet spice used in traditional medicine. Evidence has shown cloves have several health benefits, including helping to stabilize blood sugar levels and supporting liver health.

ginger: ginger contains gingerol, considered to be powerfully medicinal and anti-inflammatory, prevents nausea and can help treat chronic indigestion, and may also drastically lower blood sugar levels and heart disease risk factors. 

olive oil: containing plant-based, antioxidant compounds that are anti-inflammatory, olive oil has been shown to lower blood pressure and prevent heart disease. With the highest percentage of monosaturated fat of all edible plant oils, olive oil lowers LDL cholesterol and increases HDL.

spinach: spinach boosts immunity, supports healthy cells, builds healthy bones, improves oxygen flow in your body, and promotes a healthy metabolism to help burn more fats and carbs.

turmeric: turmeric has been found to help prevent Alzheimer’s and cancer. It can also lessen symptoms of depression and arthritis while also being a powerful anti-inflammatory and antioxidant. 

vanilla extract: in addition to the calming aroma and pleasing taste of vanilla, there is some evidence that vanilla beans have powerful antioxidant properties, are anti-inflammatory, neuroprotective, and potentially anticancer.
